Each year, AIT Ingredients publishes its survey analysing the quality of wheat from the latest harvest.
More than 1,000 samples representative of the main regions and varieties are analysed at the laboratory in Corbeil-Essonnes.
Bread making tests are also carried out by the baking technicians at the Baking Center.
These analyses enable us to immediately adapt our technical solutions to any changes occurring, and to advise our clients for their own applications.
